Sandalwood taste was born on the contact between cognac and barrel during ageing. Aromas of mushroom can be traced back to the humid conditions in their carefully monitored earth-floored warehouses, where the cognac ages. Flavours and aromas of dried apricot is present as well, hailing from the distillation on the lees, where this labor-intensive process produces a diverse and full-some array of this wonderful by-product.
